We encourage all staff to reduce their carbon footprint, use sustainable practices, recycle, conserve energy and train their peers to also do the same. All employees are encouraged to carpool, bike or walk to work. Recycling is a major operating tenet for VIN 909. Not only do we recycle over 3/4 of our trash, we even recycle our oyster shells through the Oyster Recovery Partnership and have donated over $500 to the cause. Because of all of this, we have earned the Annapolis Environmental Stewardship Certification and a Certificate of Partnership with the Environmental Protection Agency's Green Power Partnership Program.
Here at VIN 909 Chef Justin Moore has built a menu structured around a few simple values. These are: If there is an organic version of a particular product available, get that. If we can source a product locally, do that. If we can acquire a product sustainably go with that. This means we buy mushrooms from Pennsylvania, not far-flung places like Africa and South America. We get our fish and clams from captains who were out on the water this morning, using sustainable practices in approved watersheds. We are committed to certified organic ingredients so the food you eat is made from foods you know.
